Organic Bai Mu Dan White Tea

Our organic, Fair Trade Certified Bai Mu Dan White Tea (also known as Pai Mu Tan or White Peony) hails from China's southeastern Jiangxi province. This superb organic tea is made from the uppermost two leaves and a bud, plucked in early spring and withered and dried in the sun before the buds are able to open. The leaves of this organic tea from China range from green to brown with plenty of buds that show a very light green almost grey white color, covered with a delicate velvety down. The pale yellow infusion has a subtle lingering fragrance, and a mellow sweet vegetal taste.

Jiangxi, located on the Eastern side of China, is surrounded by mountains on three sides and sits comfortably in a subtropical climate, making it an excellent place for growing tea. As a whole, tea isn’t a large export from this part of China, but in the north of Jiangxi tea production has become an important part of the agriculture. The Jiangxi WuYuan Xitou Tea Farmers Association reflects the transition of a society from governmental control to democratic processes and market economy. Once state-owned, WuYuan Xitou’s ten tea gardens are now owned by individual farmers who have collectively assembled to make up the farmers association that became Fair Trade certified in 2004.

Steeping Instructions

At Arbor Teas, we believe tea should be brewed to suit your personal taste. We’re happy to make recommendations to get you started, but don’t hesitate to experiment! When brewing your tea, your main considerations are tea quantity, water temperature, and steeping time. We recommend green and white teas to be steeped for 2 to 3 minutes in water heated to not-quite-boiling, just as bubbles begin to form on the bottom of the pan (approximately 170 to 180 degrees F). For the best flavor, use fresh water whenever possible. Try not to steep your tea longer than necessary, as you’ll extract undesirable bitterness from the leaves. If you want a stronger brew, don’t steep longer, just use more tea. And don’t forget to re-steep your tea leaves to get the most out of your leaf!

    Wonderful (and economical) Bai Mu Dan!

    Tastes of hay lightly sweetened with honey. No bitterness or astringency with a very light minerality. Quite smooth and refreshing. Beautiful as iced tea. A definite keeper!

    Subtle and Pleasant

    I enjoy studying the subtle notes and fragrances of this delicate, but still complex, tea. It has a surprisingly rich mouthfeel for its light flavors, which are reminiscent of the vegetal sweetness of steamed squash or asparagus stems. It has no astringency or bitterness to overpower its light flavors, making it easy to drink continuously throughout the day. The subtle flavors and scents linger on, as well, which adds to the experience of drinking it. I tend to steep it just on the strong side, at maybe one and a half tablespoons, though only for two to three minutes. I've found I can reuse the leaves three times without losing too much flavor, which makes this more economical and helps to balance the high volume used. Since these leaves are large and loosely packed, a good cup requires a higher volume of leaves than other teas. Overall, it's a pleasant, mellow, and soothing tea for those who enjoy light, sweet, vegetal flavors.

    My all time favorite tea

    This tea is mellow and subtle in flavor- much better than other white teas I've purchased at local tea shops or grocery stores. I don't think it has much caffeine, or at least it never has left me jittery. It's gentle on my stomach, unlike black or green teas. It has become the only tea I drink. I also love supporting Arbor Teas.

    This helped me stay awake while working and going to school full time. Hot, cold, or mixed with other teas, this tea is amazing. I personally drink a lot of milk tea cuz I was a manager of a boba milk tea shop, but I drink this straight brewed because it's too light to add milk to, but it's still perfect.

    Best white tea I've tasted!! Smooth with a nice woody flavor, no astringency at all. Wonderful tea to unwind with before heading off to la-la land. Makes a good restful sleep even more restful. When following the prescribed temperature and time, one can't go wrong!!
